THE PRODUCER
The Sayisa Site is in the Anasora village of South Guji, Ethiopia. This station receives cherries from smallholder farms in the area.
THE PROCESS
Ripe, red cherries are selectively handpicked by grower farmers and delivered to the Sayisa Site.
The coffee undergoes 10 hours of aerobic fermentation in a 24 degree Celsius environment.
After fermentation, the cherries are dried on African raised beds for 3-4 weeks. Throughout the drying process, the cherries are regularly rotated to ensure even drying.
WHY WE LOVE IT
This coffee has a bold yet elegant sweetness. On the nose, floral notes come through but in the cup those give way to a sweetness of melon candy, raspberry, and lemon curd.
